Tomato and watermelon salad with feta and toasted almonds
Ingredients
- Tomatoes 5 lbs
- Coarse Salt 1 teaspoon
- Watermelon 5 lbs
- Olive Oil 5 tablespoons
- Red Wine Vinegar 1.5 tablespoons
- Herbs 1 bunch
- Arugula 15 oz
- Ground Black Pepper to taste
- Feta cheese 5 oz
- Chopped almonds 5 oz
Step-by-Step Guide
Step 1
In a large bowl, combine diced watermelon flesh and diced tomatoes. Sprinkle with coarse salt and mix well. Let sit for 15 minutes.
Step 2
Add 4 tablespoons of oil, vinegar, and finely chopped herbs. Mix again. Season with pepper and salt to taste.
Step 3
In a small bowl, toss arugula with the remaining oil and arrange on plates. Top with the salad mixture and sprinkle with feta and toasted almonds.
