Ingredients
- Fresh basil leaves ½ cup
- Olive Oil 2 tablespoons
- Champagne Vinegar 2 tablespoons
- Coarse Salt to taste
- Ground Black Pepper to taste
- Goat cheese 5 oz
- Tomatoes 3 pieces
Step-by-Step Guide
Step 1
In a blender, combine the basil leaves, oil, vinegar, and 1 tablespoon of water. Blend until smooth for 1–2 minutes. Season with salt and pepper.
Step 2
Using a hot knife, slice the cheese into thin pieces. Cut the tomatoes into thin rounds.
Step 3
Arrange the slices of tomatoes and cheese alternately on a plate, drizzling with the vinaigrette.
