Three Bean Salad with Mustard Vinaigrette
Ingredients
- Chinese green beans 10 oz
- Chinese green beans 5 oz
- Dijon Mustard 2 tablespoons
- Red Wine Vinegar 2 tablespoons
- Olive Oil 2 tablespoons
- Coarse Salt to taste
- Ground Black Pepper to taste
- White Beans 15 oz
Step-by-Step Guide
Step 1
Cut the green and yellow beans into small pieces and cook in boiling water or steam until tender. Drain and transfer to ice water for a while. Drain again and dry well.
Step 2
In a small bowl, mix the mustard, vinegar, and oil. Season with salt and pepper.
Step 3
Add both cooked beans and the cannellini beans to the vinaigrette. Toss and serve.
