
Tabbouleh with Broccoli

Description
If you don't like broccoli raw, try substituting it with cauliflower in the same amount.
Ingredients
- Broccoli 5 oz
- Parsley 1 bunch
- Chopped Cilantro 1 bunch
- Green onions 6 stalks
- Fresh Mint ½ bunch
- Cherry Tomatoes 5 oz
- Cucumbers 2 pieces
- Lemon 1 piece
- Olive Oil 0 fl oz
Step-by-Step Guide
Step 1
Grate the broccoli florets using a grater or food processor until it resembles couscous.
Step 2
Finely chop the parsley, green onions, cilantro, and mint as much as possible.
Step 3
Dice the cherry tomatoes and cucumbers into small cubes.
Step 4
Mix all the ingredients in a salad bowl.
Step 5
For the dressing, mix the juice of 1 lemon with olive oil in a 1:2 ratio. If the dressing seems too sour, don't worry as the acidity will be absorbed by the salad.
Step 6
Pour the dressing over the tabbouleh. Season with salt and pepper to taste and let it sit in the refrigerator for 30 minutes to 1 hour to marinate.
Step 7
Garnish on top with broccoli florets.
