Tabbouleh Salad with Parsley
Ingredients
- Couscous 5 oz
- Tomatoes 10 oz
- Parsley to taste
- Scallions to taste
- Lemon 1 piece
- Olive Oil 5 tablespoons
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Pour boiling water over the couscous and let it sit for about 20 minutes.
Step 2
Chop the tomatoes. Finely chop the green onion and parsley (without stems).
Step 3
Mix the parsley, onion, tomatoes, and couscous. Dress the salad with 4–5 tablespoons of olive oil and squeeze the juice of half a lemon. Add salt and pepper, then refrigerate the salad to let it marinate. You can add lemon wedges for decoration and flavor.
