Sweet Corn with Beets and Basil
Ingredients
- Coarse Salt to taste
- Ground Black Pepper to taste
- Sweet Corn Sticks 2 pieces
- Canned Baby Beets 20 oz
- Olive Oil to taste
- Fresh basil leaves 2 tablespoons
Step-by-Step Guide
Step 1
Carefully cut the kernels off the corn cobs with a sharp knife and transfer them to a bowl. Add the beets and drizzle with olive oil. Season with salt and pepper, and add the torn basil leaves. Toss and serve.
Step 2
Boil the corn cobs in salted boiling water until tender, about 4 minutes. Transfer to a plate.
Step 3
In the same water, add the well-washed beets (unpeeled) and cook, covered, until tender, 30–35 minutes. Transfer to a plate. Cool and peel. Then cut into 4 pieces.
