Ingredients
- Daikon 20 oz
- Cucumbers 20 oz
- Rice Vinegar for Sushi 3 tablespoons
- Salt to taste
Step-by-Step Guide
Step 1
Peel the daikon and slice it into thin rounds.
Step 2
Slice the cucumber into rounds of the same thickness.
Step 3
Add salt, mix, and let it sit for 10 minutes.
Step 4
Rinse the daikon and cucumber under cold water and prepare the dressing: mix 5 tablespoons of rice vinegar with 2 tablespoons of sugar.
Step 5
Stir until the sweetener dissolves, pour over the vegetables, mix, and refrigerate for 15–20 minutes to marinate.
Step 6
Remove the sunomono from the refrigerator and mix again.
