Description

If you really want to make a quick slaw, you definitely need a food processor that will chop most of the ingredients finely enough that doing it by hand would be very difficult, if not impossible. Serve as a side dish with meat, chicken, or fish.

Ingredients

  • White Cabbage 1 head
  • Carrot 1 piece
  • Granny Smith apples 1 piece
  • Dill 1 bunch
  • Lemon 1 piece
  • Unrefined Sunflower Oil 0 fl oz
  • Olive Oil 0 fl oz
  • Sunflower Seeds 0 fl oz
  • Scallions 6 stalks

Step-by-Step Guide

Step 1

Process the vegetables in the food processor using the medium grater setting, one at a time.

Step 2

Half of a small head of cabbage, removing the core first.

Step 3

Peeled carrot.

Step 4

An apple with the core removed — if the apple is small, you can use two.

Step 5

Trim the tough stems from the dill and finely chop the dill leaves.

Step 6

Finely chop the green onion.

Step 7

Grate the lemon zest and squeeze the juice from half of the lemon.

Step 8

For the dressing, mix 30 ml of lemon juice, 60 ml of unrefined sunflower oil, and 30 ml of olive oil.

Step 9

Transfer all ingredients to a salad bowl and mix the food processor ingredients with the dill, lemon zest, and dressing.

Step 10

Top with peeled sunflower seeds.
