Summer Zucchini and Feta Salad
Ingredients
- Buckwheat ¼ cup
- Zucchini 25 oz
- Green Onion 2 pieces
- Mint ¼ cup
- Oregano 1 teaspoon
- Olive Oil 3 tablespoons
- Salt to taste
- Ground Black Pepper to taste
- Freshly squeezed lemon juice 1 tablespoon
- Feta cheese 5 oz

Step 1
To prepare the summer zucchini and feta salad, toast the buckwheat over medium heat until fragrant (about 4 minutes). Transfer to a plate and let cool.
Step 2
Combine the zucchini, green onion, mint, oregano, oil, and juice in a large bowl. Season with salt and pepper, and add more lemon juice if desired. Add the feta and buckwheat, and gently mix. Serve immediately.
