Summer Barley Salad with Arugula, Cherry Tomatoes, and Capers
Ingredients
- Pearl barley 20 oz
- Arugula 5 oz
- Radicchio Salad 1 bunch
- Spanish onions 1 head
- Courgette 1 piece
- Marinated cherries 15 oz
- Capers 3 tablespoons
- Red Wine Vinegar to taste
- Olive Oil to taste
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Cook the barley in a pot of boiling water until tender, about 20 minutes.
Step 2
Meanwhile, in a bowl, combine chopped radicchio, arugula, peeled and diced cucumber, finely chopped onion, halved cherry tomatoes, and capers.
Step 3
Drain and cool the barley. Add it to the salad and mix well.
Step 4
Dress with a small amount of vinegar and olive oil. Season with salt and pepper. Serve at room temperature.
