  • Grapeseed Oil 2 tablespoons
  • Watercress 1 bunch
  • Mint Leaves 0 oz
  • Turnips 5 oz
  • Salt 2 teaspoons
  • Balsamic Vinegar 2 tablespoons
  • Homemade Cheese 5 oz

Step-by-Step Guide

Step 1

Place the walnuts in the oven preheated to 345°F for 5-8 minutes, then immediately transfer them to a bowl with grapeseed oil while still warm.

Step 2

Slice the radishes into thin rounds, chop the mint leaves finely, and roughly chop the watercress.

Step 3

Add the sugar snap pea pods to a pot of salted boiling water and cook for about 1-2 minutes. Once the peas turn bright green, drain them and immediately transfer to an ice bath. Once cooled, dry the pods and slice them diagonally.

Step 4

Combine the peas with the radishes, watercress, mint, and homemade cheese (or ricotta). Add the walnuts with the grapeseed oil.

Step 5

Just before serving, season the salad with vinegar and salt.
