Ingredients
- Green Butter ½ bunch
- Squid 5 oz
- Red Grape Juice 5 oz
- Olive Oil 2 tablespoons
- Feta cheese 5 oz
- Salt a pinch
- Meyer Lemon Juice ½ teaspoon
Step-by-Step Guide
Step 1
Place the frozen squid in a bowl, pour boiling water over it, and remove the membranes and entrails.
Step 2
Add salt, peppercorns, and bay leaf to boiling water. Dip the squid into the boiling water one at a time for about 15 seconds.
Step 3
Cut the squid into strips, the feta cheese into cubes, and halve the grapes (removing the seeds).
Step 4
Arrange everything on a plate decorated with lettuce leaves, drizzle with lemon juice, add olive oil, salt, and mix thoroughly.
