Squid is one of the most accessible and popular seafood options in our country. It was also a highlight of the traditional fish Fridays: just one recipe of this salad speaks volumes! It is sometimes referred to as 'Nikita's Salad' in honor of a famous leader, under whose influence this dish began to be prepared in cafeterias across the country. The squid is best thawed slowly in the refrigerator; if done quickly, it will lose its texture. The optimal cooking time for squid is about five minutes, depending on its size. It is important not to overcook it, or it will lose moisture and become rubbery.
Ingredients
- Squid 15 oz
- Chicken Egg 4 pieces
- Cucumbers 10 oz
- Scallions 0 oz
- Parsley 0 oz
- Mayonnaise 5 oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Boil the eggs in boiling water for 11 minutes.
Step 2
Cool the cooked eggs, peel them, and dice them.
Step 3
Bring water to a boil and add the cleaned squid. Once the water comes back to a boil, remove the squid and transfer them to cold water.
Step 4
Pat the squid dry with a paper towel and cut it into strips.
Step 5
Cut the cucumbers into julienne strips.
Step 6
Chop the herbs.
Step 7
Combine all the prepared ingredients, dress with mayonnaise, and season with salt and pepper to taste.
