Ingredients
- Onion 2 heads
- Squid 20 oz
- Red Grape Juice 15 fl oz
- Passata Tomato Sauce 1 tablespoon
- Kefir 5 fl oz
- Cognac 2 tablespoons
- Butter 5 oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Boil the squid in salted water for 3 minutes, then cut into strips. Melt the butter and add the squid. Slice the onion into half-rings and blanch with boiling water.
Step 2
Add the tomato paste, onion, pepper, and salt to the squid, and mix. Pour in the wine and cook for 5 minutes. Add the kefir, bring to a boil, remove from heat, and let steep for 5 minutes.
Step 3
Pour in the cognac, mix, and serve on a plate.
