Spinach Salad with Smoked Salmon and Avocado Oil
Ingredients
- Young Spinach "Belaya Dacha" 5 oz
- Oranges 3 pieces
- Avocado 2 pieces
- Red Grape Juice 1 piece
- Smoked Salmon Flavored Croutons 5 oz
- Lime 1 piece
- Avocado 2 tablespoons
- Salt to taste
- Ground Black Pepper to taste
- Shelled pumpkin seeds to taste
- Sweet Red Onion 1 head
Step-by-Step Guide
Step 1
Peel the oranges and grapefruit in such a way that all the white pith is removed, exposing the flesh.
Step 2
Cut half of the orange and set it aside.
Step 3
From the remaining oranges and grapefruit, cut out the segments with a sharp knife, ruthlessly removing all the white membranes. If the grapefruit is large, cut the segments in half.
Step 4
Squeeze the juice from the half lime and set it aside.
Step 5
Cut the onion in half and slice it as thinly as possible into half-rings.
Step 6
Peel the avocados using any method you know or a special tool, and remove the pit. Cut the avocado halves into slices about 0.5 cm thick.
Step 7
Immediately drizzle the sliced avocado with lime juice to prevent browning.
Step 8
In a large bowl, mix the young spinach leaves, citrus segments, avocado, onion, and thinly sliced salmon or any other red fish cut similarly. If you couldn't find cold smoked salmon, you can use lightly salted fish. However, smoked fish is easier to slice as it holds its shape better.
Step 9
For the dressing, mix the avocado oil with the squeezed orange juice, salt, and pepper well.
Step 10
Dress the salad with this dressing and mix well.
Step 11
Serve immediately, optionally sprinkling pumpkin seeds on top.
