Spinach Salad with Raspberries and Feta
Ingredients
- Olive Oil 0 fl oz
- Red Wine Vinegar 1 tablespoon
- Dijon Mustard 1 teaspoon
- Brown Sugar ½ teaspoon
- Lemon 1 piece
- Fresh basil leaves 5 oz
- Chopped almonds 0 oz
- Raspberry leaves 5 oz
- Feta cheese 5 oz
Step-by-Step Guide
Step 1
In a jar, combine olive oil, vinegar, mustard, sugar, a pinch of salt, and pepper. Close the lid and shake well.
Step 2
Using a citrus zester, remove the zest from the lemon (only the yellow part) and cut it into very thin strips.
Step 3
Place the spinach leaves (preferably small leaves) in a large bowl, sprinkle with zest, raspberries, and feta. Drizzle with the dressing, toss, and serve.
