Spinach Salad with Grilled Beef and Blueberries
Ingredients
- Fresh Berries 1 cup
- Chopped almonds ½ cup
- Raspberry leaves 3 tablespoons
- Shallot 1 head
- Sugar 1 teaspoon
- Salt ½ teaspoon
- Walnuts 3 tablespoons
- Ground Black Pepper ½ teaspoon
- Fresh basil leaves 8 cups
- Veal Tenderloin 20 oz
- Feta cheese ¼ cup
Step-by-Step Guide
Step 1
Preheat the grill.
Step 2
In a blender, combine 0.25 cup of blueberries, 0.25 cup of walnuts, vinegar, chopped shallot, sugar, and 0.25 teaspoon of salt. Blend until smooth and slowly add the oil while blending. Pour the dressing into a large bowl.
Step 3
Season the meat with the remaining salt and pepper. Place it on the grill and cook to your desired doneness. Transfer to a cutting board and slice.
Step 4
Add the spinach leaves to the dressing and mix well. Divide among plates.
Step 5
Top the spinach with the sliced meat and sprinkle with the remaining blueberries, walnuts, and feta.
