  • Fish Sauce 1 tablespoon

  • Green Beans 10 oz
  • Zucchini 1 piece
  • Shallot 1 head
  • Pomelo 1 piece
  • Chopped Mint Leaves 0 oz

Step-by-Step Guide

Step 1

Pour water into a large pot, add salt, and bring to a boil. While the water is heating, place the garlic, red pepper flakes, and green chili pepper in a mortar and grind them into a paste with a pestle. Then add the sugar, fish sauce, lime juice, and continue to grind until the sugar dissolves. Taste the sauce and add more sugar if needed; you can also add more fish sauce, lime juice, or pepper if you think it necessary. The sauce should be very rich: spicy, sweet, salty, and sour.

Step 2

Once the sauce is ready, pour boiling water over the green beans for one minute; they should turn bright green but still be very crunchy. After that, place the beans under cold water to cool them down. After drying the beans well on a paper towel, place them in a large bowl, add the zucchini, shallot, pomelo, and mint, and mix everything together. Then dress the salad with the sauce and mix again. The salad is ready and can be served.
