Spicy Lentil Salad

Ingredients

  • Green French Lentils 1 cup
  • Coarse Salt 1 teaspoon
  • Cucumbers 2 pieces
  • Sweet Red Onion 1 piece
  • Garlic 3 cloves
  • Parsley ½ bunch
  • Cilantro leaves ½ bunch
  • Red Wine Vinegar 2 tablespoons
  • Balsamic Vinegar ½ teaspoon
  • Lemon Juice 2 tablespoons
  • Olive Oil 2 tablespoons
  • Sugar a pinch
  • Lemon Zest ½ piece
  • Freshly ground black pepper a pinch

Step-by-Step Guide

Step 1

Rinse the lentils in cold water and add them to boiling water. Bring back to a boil, reduce the heat, cover, and let simmer for about 40 minutes. The lentils should be tender but not mushy (green lentils hold their shape well, which is why they are often used in salads). Salt at the end of cooking and drain in a colander to remove excess water.

Step 2

Peel the cucumbers if necessary and cut them into small cubes, chop the onion in the same way, and mince the garlic and herbs.

Step 3

Combine the vegetables and herbs in a large bowl and add the lentils.

Step 4

Mix the vinegar, lemon juice, and olive oil, add a pinch of sugar, grated lemon zest, and shake everything well (you can use a jar with a lid).

Step 5

Pour the dressing over the lentil salad and mix thoroughly. Season with salt and pepper and mix again.

Step 6

Cover and refrigerate to chill. Serve the salad cold.
