Spelt Salad with Peas and Gooseberries
Ingredients
- Onion ½ head
- Celery stalk ½ stalk
- Carrot 1 piece
- Spelt flour 0 oz
- Dill ¼ bunch
- Green peas (podded) 5 oz
- Herbs 0 oz
- Tomatoes 2 pieces
- Gooseberries 3 pieces
- Rapeseed oil to taste
Step-by-Step Guide
Step 1
Place the onion, celery, and carrot in a pot with 200 ml of water.
Step 2
Bring to a boil and simmer for 15 minutes. Add the spelt, cover the pot, and cook for another 10 minutes.
Step 3
Add the chopped dill root, pea pods, and cook for another 10 minutes. The spelt should be soft but al dente.
Step 4
Salt the water well, then drain it. Place the cooked vegetables and spelt in the refrigerator for 1 hour to cool.
Step 5
To serve, place salad leaves on a plate. Top with the vegetables and spelt.
Step 6
Garnish with tomatoes, gooseberries, peas, and dill root. Drizzle with rapeseed oil.
