Ingredients
- New Potatoes 20 oz
- Olive Oil 3 tablespoons
- Salt 1½ teaspoons
- Ground Black Pepper ½ teaspoon
- Minced garlic 4 cloves
- Mayonnaise 4 tablespoons
- Meyer Lemon Juice 1 tablespoon
- Dijon Mustard 1 teaspoon
Step-by-Step Guide
Step 1
Preheat the oven to 400 degrees Fahrenheit.
Step 2
Cut the potatoes into small wedges in a bowl. Add 2 tablespoons of olive oil, ¾ teaspoon of salt, and pepper.
Step 3
Mix well and spread on a baking sheet in a single layer.
Step 4
Bake until golden brown. Remove from the oven and let cool. In a bowl, combine ½ teaspoon of salt, 1 tablespoon of olive oil, minced garlic, mayonnaise, lemon juice, and Dijon mustard.
Step 5
Mix everything well with the cooled potatoes.
