Step-by-Step Guide

Step 1

Take 125 grams of soybeans.

Step 2

Soak for 10–16 hours (depending on the ambient temperature). During soaking, either remove the hulls (in this case, soaking for 6–8 hours is sufficient) or after soaking, place the wet beans in the microwave for 2 minutes to eliminate the enzymes responsible for the grassy taste and smell.

Step 3

Drain the water in which the beans were soaked; it is no longer needed.

Step 4

Grind the pre-soaked beans into a paste in 1 liter of water, then after squeezing (through cheesecloth or special fabric) from the okara* (solid remnants of the beans), add enough water to make 1 liter.

Step 5

Boil the resulting liquid for 5-10 minutes. It's ready.

Step 6

Store in the refrigerator for up to 3 days.
