Smoked Turkey with Plums, Fennel, Radicchio, and Pecan
Ingredients
- Fennel 1 piece
- Radicchio Salad ½ bunch
- Plums 5 oz
- Smoked turkey roll 10 oz
- Brown Sugar 1 tablespoon
- Olive Oil 0 fl oz
- Balsamic Vinegar 5 fl oz
- Salt ¼ teaspoon
- Pecan 5 oz
- Ground Black Pepper ¼ teaspoon
Step-by-Step Guide
Step 1
Slice the smoked turkey leg very thinly, almost transparently, and place it in a bowl with vinegar and oil.
Step 2
Cut the fennel bulb into wedges and grate it using a coarse grater. Repeat this process with the radicchio. Slice the ripe black and red plums thinly. Chop or crush the roasted pecans with a knife.
Step 3
Mix all the ingredients with the sauce, plums, and pecans. Season with pepper to taste.
Step 4
Combine vinegar, brown sugar, salt, and pepper. Once the sugar dissolves, slowly drizzle in the olive oil while whisking until emulsified.
