Smoked Mackerel Salad with Potatoes

Ingredients
- Canned Mackerel in Oil 20 oz
- Salad Potatoes 4 pieces
- Dijon Mustard 4 tablespoons
- Mixed salad greens 5 oz
- Olive Oil 5 fl oz
- Soy Sauce 1 tablespoon
- Meyer Lemon Juice 1 tablespoon
Step-by-Step Guide
Step 1
Remove the skin and bones from the cold-smoked mackerel fillet and cut it into small pieces.
Step 2
Boil the potatoes in their skins (DO NOT salt!). The center of the tuber should remain slightly raw — the potatoes should not be overcooked or fall apart! Cool, peel, and cut into 2x2 cm cubes.
Step 3
Mix the grainy mustard, olive oil, soy sauce, and lemon juice until smooth.
Step 4
As a 'base', lay the mixed salad greens (for example, romaine, frisée, radicchio, and corn) on a plate, then place the pieces of mackerel and potato cubes on top, and drizzle with the sauce.
