Smoked mackerel and potato salad
Ingredients

- Apple Cider Vinegar 3 spoons
- Dijon Mustard 3 spoons
- Sugar 1 tablespoon
- Olive Oil 4 spoons
- Hot smoked pink salmon 15 oz
- Scallions 0 oz
- Dill 0 oz
- Salt to taste
Step-by-Step Guide
Step 1
Peel the potatoes, cut them into pieces, place them in a pot, and cover with water just enough to barely submerge them. Add salt, bring to a boil, and cook over medium heat for twelve to fifteen minutes.
Step 2
While the potatoes are boiling, whisk together the vinegar, mustard, sugar, and a pinch of salt until the salt and sugar dissolve. Continuing to whisk, gradually drizzle in the olive oil.
Step 3
Remove the skin from the mackerel and break the fillet into pieces — the layers in the smoked mackerel meat separate easily from each other.
Step 4
Drain the water from the potatoes. Add the dressing and mix well. Then add the fish along with the chopped onion and dill, mix again, and serve on plates.
