Smoked Duck and Pluot Salad
Ingredients
- Rice Vinegar for Sushi 2 tablespoons
- Shallot 1 head
- Grated Ginger Root 1 tablespoon
- Wasabi ¼ teaspoon
- Peanut Butter 0 oz
- Romaine lettuce 5 oz
- Unsalted peanuts, shelled 5 oz
- Pluot 10 oz
- Roast duck 10 oz
- Basil 3 pieces
- Scallions 0 oz
Step-by-Step Guide
Step 1
In a blender, combine the vinegar, finely chopped shallot, ginger, and wasabi. While blending, gradually add the oil. Pour into a bowl.
Step 2
In the bowl with the dressing, add the lettuce leaves and 0.25 cup of lightly crushed peanuts. Mix well and divide onto plates. Top with thinly sliced duck breast and thinly sliced pluots. Drizzle with dressing and sprinkle with finely chopped basil, green onion, and remaining peanuts.
