Ingredients
- Eggplants 4 pieces
- Spanish onions 1 piece
- Tomatoes 4 pieces
- Garlic 9 cloves
- Sugar 1 tablespoon
- Dill to taste
- Parsley to taste
- Salt to taste
- Ground Black Pepper to taste
- Vegetable Oil to taste
Step-by-Step Guide
Step 1
Cut the eggplants into cubes, sprinkle with salt, and set aside for half an hour. Then rinse under running water. Peel the onion and chop it finely.
Step 2
Pour a little vegetable oil into the skillet, add the onion, sprinkle it with sugar, and sauté until lightly golden. Add the eggplants and simmer covered on low heat until tender.
Step 3
Transfer the sautéed eggplants with onions to a salad bowl, add diced tomatoes, finely chopped herbs, minced garlic, salt, and vinegar. Mix well and chill.
