Sicilian Salad
Ingredients
- Pitted olives 5 oz
- Fennel 25 oz
- Olive Oil 0 fl oz
- Pickled capers 5 oz
- Meyer Lemon Juice 5 fl oz
- Oranges 15 oz
- Ocean salt to taste
- Spices to taste
Step-by-Step Guide
Step 1
Cut the olives in half.
Step 2
Peel one orange and remove the thin membranes from the segments.
Step 3
Cut the remaining oranges in half and squeeze out the juice.
Step 4
In a small saucepan, combine the orange and lemon juice. Bring to a boil, reduce the heat, and simmer the juice until it is reduced by half. Add a little olive oil, season with salt and pepper. Whisk the mixture lightly with a fork.
Step 5
Very thinly slice the fennel fronds and place them in cold water for 20 minutes. Drain the water and gently squeeze the fennel.
Step 6
In a salad bowl, place the prepared fennel. Dress with the sauce, add herbs, capers, and mix everything well.
Step 7
When serving, garnish with orange segments and halved olives.
