Shrimp Salad with Grapefruit and Mint Dressing
Ingredients
- King Prawns 10 pieces
- Grapefruits 1 piece
- Green Butter 1 bunch
- Danish Blue Cheese 0 oz
- Grated Ginger Root to taste
- Meyer Lemon Juice 1 tablespoon
- Fresh Mint 1 bunch
- Olive Oil 3 tablespoons
- Salt to taste
Step-by-Step Guide
Step 1
Prepare the shrimp: boil them and clean.
Step 2
Finely chop the ginger, sauté it with the shrimp in a small amount of olive oil (1 tablespoon) until golden brown. Let cool.
Step 3
For the dressing, blend the leaves of a small bunch of mint, 2 tablespoons of olive oil, 1 tablespoon of lemon juice, and salt. The leaves should be finely chopped.
Step 4
Wash and dry the lettuce, place it on a plate. Drizzle with half of the dressing. Then add the cooled shrimp, the peeled grapefruit segments, and diced cheese. Drizzle with the remaining dressing.
