Shrimp Salad in Avocado Boats

Ingredients

  • Avocado 3 pieces
  • Meyer Lemon Juice 1 tablespoon
  • Tiger shrimp in brine 18 pieces
  • Red Caviar 5 oz
  • Courgette 1 piece
  • Sweet Red Onion ½ piece
  • 10% cream 1½ tablespoons
  • Ocean salt to taste
  • White Pepper (whole) to taste
  • Cilantro to taste
  • Chopped Sage Leaves to taste

Step-by-Step Guide

Step 1

Boil the shrimp in salted water for 3-5 minutes with spices (I usually use a sprig of dill, parsley, 5 black peppercorns, 3 allspice berries, 1 bay leaf, a small onion, and a quarter of a lemon).

Step 2

The avocado should be ripe (soft), wash and dry it. Cut it in half lengthwise, remove the pit, and carefully scoop out the flesh from the skin with a spoon.

Step 3

Slice the onion into half rings (pour 1 tablespoon of lemon juice over it - marinate for 10 minutes).

Step 4

Cut the avocado and cucumber into strips, add the onion, 1 tablespoon of red caviar, sour cream, salt, pepper, herbs, and mix.

Step 5

Place the salad into the avocado skin and garnish.
