Ingredients

  • Water ¾ cup
  • Salt to taste
  • Peeled Cooked Shrimp 25 oz
  • Jicama 10 oz
  • Mango 1 piece
  • Chopped Green Onions ½ cup
  • Meyer Lemon Juice 6 tablespoons
  • Dijon Mustard ½ teaspoon
  • Ground Black Pepper ¼ teaspoon
  • Olive Oil ¼ cup

Step-by-Step Guide

Step 1

In a pot, bring salted water to a boil, add the shrimp, cover with a lid, and bring back to a boil. Cook for about 1-2 minutes, stirring, until cooked through. Drain and cool. Cut in half lengthwise, then crosswise in half, and transfer to a bowl.

Step 2

Add the peeled and diced jicama, diced mango, and cilantro.

Step 3

In a small bowl, mix the lemon juice, mustard, salt, and black pepper. Whisk in the olive oil. Drizzle the dressing over the salad and toss.
