
Shrimp Cocktail Salad

Description
Mayonnaise can be replaced with homemade mayonnaise. To make it, combine 1 egg, half a teaspoon of mustard, a pinch of salt, and a pinch of sugar in a deep bowl and whisk the mixture until smooth. Then, slowly pour in vegetable oil (100–200 ml), continuing to whisk. Add 1 tablespoon of lemon juice and whisk again. Chill the prepared mayonnaise in the refrigerator.
Ingredients
- Shrimp 10 oz
- Meyer Lemon Juice 2 tablespoons
- Apple 2 pieces
- Carrot 2 pieces
- Courgette 2 pieces
- Mayonnaise 3 tablespoons
- Parsley 2 stalks
Step-by-Step Guide
Step 1
Peel the shrimp, remove the intestinal vein (which runs along the back). Boil water in a large pot, add salt, add the shrimp, and cook for no more than 3 minutes. Drain in a colander, let the water drain, and cool.
Step 2
Peel the apples, remove the cores, grate them on a fine grater, and sprinkle with lemon juice. Wash the cucumbers, remove the ends, and grate them on a medium grater. Peel the carrots and grate them on a fine grater.
Step 3
In glasses or dessert bowls, layer the cucumbers, carrots, and apples, spreading mayonnaise between each layer.
Step 4
Top the glasses with shrimp (if using large shrimp, cut them into 3–4 pieces), garnish with parsley, and chill slightly before serving.
