Shrimp and Tomato Salad
Ingredients
- Peeled Cooked Shrimp 20 oz
- Tomatoes 4 pieces
- Chinese green beans 10 oz
- Lemon 1 piece
- Olive Oil 2 tablespoons
- Scallions to taste
- Fresh basil leaves to taste
- Honey-Mustard Dressing 1 tablespoon
- Sugar ½ teaspoon
- Feta cheese 5 oz
- Cucumbers 4 pieces
Step-by-Step Guide
Step 1
Boil the shrimp in salted water. Drain and rinse under cold water. Pat dry and place in a large bowl.
Step 2
In a saucepan, add water (enough to raise the level about 2 cm from the bottom) and bring to a boil. Add the green beans and salt. Cook for 5 minutes. Drain the beans and rinse under cold water. Pat dry.
Step 3
Place the beans, quartered tomatoes, and cucumbers in a salad bowl.
Step 4
Prepare the dressing. In a small bowl, combine 3 teaspoons of lemon juice, the zest of ½ lemon, olive oil, green onions, oregano, mustard, sugar, pepper, and ¾ teaspoon of salt.
Step 5
Gently mix the shrimp and vegetables with the dressing and diced feta cheese.
