Shrimp and Tomato Salad

Description
Instead of salt, you can add soy sauce to the dressing — it will enhance the flavor.
Ingredients
- Shrimp 10 oz
- Tomatoes 2 pieces
- Parsley 1 bunch
- Spanish onions 1 piece
- Olive Oil 2 tablespoons
- Balsamic Vinegar 1 tablespoon
- Meyer Lemon Juice to taste
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
In a bowl, mix olive oil, balsamic vinegar, lemon juice to taste, and season the dressing with salt and pepper.
Step 2
Boil the shrimp in salted water for 3–4 minutes.
Step 3
Peel the shrimp.
Step 4
Wash the parsley, dry it, tear it by hand, and place it on a serving plate.
Step 5
Cut the tomatoes and also place them on the plate.
Step 6
Top with the boiled shrimp.
Step 7
Sprinkle with rings of sweet onion, drizzle the salad with dressing, and season with salt and pepper to taste.
