Shrimp and grapefruit salad
Ingredients
- Meyer Lemon Juice 3 tablespoons
- Olive Oil 0 fl oz
- Honey 1 teaspoon
- Peeled Cooked Shrimp 15 pieces
- Grapefruits 1 piece
- Fennel ½ piece
- Courgette 1 piece
- Avocado 1 piece
- Scallions 1 bunch
- Cilantro 1 tablespoon
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
In a small bowl, combine lemon juice with olive oil, honey, and spices to taste.
Step 2
In another bowl, mix shrimp with salt, pepper, and add a little more oil.
Step 3
Sauté the shrimp over high heat for a few minutes and set aside to cool.
Step 4
In a salad bowl, combine grapefruit segments with cucumber, fennel, and avocado. Season to taste, mix, and dress with the lemon-honey mixture.
Step 5
Divide the salad onto plates, top with shrimp, sprinkle with herbs, drizzle with dressing again, and serve.
