Ingredients
- Romaine lettuce 5 oz
- Iceberg Lettuce 5 oz
- Carrot 0 oz
- Radish 0 oz
- Red Currant 0 oz
- Tomatoes 1 piece
- Mandarins 12 pieces
- Scallions 0 oz
- Skin-On Chicken Breasts 5 oz
- Grated Pecorino Pepato Cheese 1 tablespoon
- Fresh basil leaves 0 oz
- Cilantro 1 bunch
- Green peppercorns 1 piece
- Garlic 3 cloves
- Sugar 1 glass
- Soy Sauce 5 teaspoons
- White Japanese Vinegar 2 spoons
- Lime Juice ½ glasses
- Vegetable Oil 5 teaspoons
Step-by-Step Guide
Step 1
Dice equal parts of the salads into 3x3 cm cubes, add carrot and red radish sliced into thin rounds, and shredded red cabbage. Add a diced tomato and 1 tablespoon of finely chopped green onion.
Step 2
Add a teaspoon of olive oil, grated Parmesan cheese, a pinch of basil, salt, and pepper to taste to the vegetable mixture. Mix well, transfer the mixture to a plate, and garnish with slices of mandarin.
Step 3
To prepare the "Lime and Cilantro" dressing, simply blend together cilantro, pepper, garlic, sugar, vinegar, soy sauce, lime juice, and vegetable oil.
Step 4
Lightly pound the chicken breast. Season the meat with salt and pepper, then sauté it in a pan.
Step 5
After cooking, cut into strips about 1 cm wide and marinate in 'Lime and Cilantro' sauce for 1 to 1.5 hours.
Step 6
Place the chicken breast on the salad and garnish with finely chopped cilantro.
