Seafood Salad with Sun-Dried Tomatoes
Ingredients
- Broccoli 10 oz
- Orange Bell Peppers 1 piece
- Chinese green beans 5 oz
- Lemon 2 pieces
- Roasted Peanuts 2 tablespoons
- Garlic 2 cloves
- Olive Oil 5 fl oz
- Seafood cocktail 0 lbs
- Pitted olives 5 oz
- Sun-Dried Tomatoes 5 oz
Step-by-Step Guide
Step 1
Place the seafood mix in a pan and sauté in its own juices with the juice of one lemon for about 3 minutes. Then heat the olive oil and sauté the garlic clove in it. After removing the garlic, sauté the seafood for another 2–3 minutes, then let it cool.
Step 2
Boil the green beans in salted water for about 2–3 minutes, then drain and sauté in olive oil until golden brown.
Step 3
Break the broccoli into florets and boil for 2–3 minutes in salted water with a tablespoon of olive oil.
Step 4
Roast the bell pepper in the oven (microwave) or multicooker, wrap it in a bag, and let it cool. Afterward, peel off the skin, remove the seeds, and cut it into thin strips.
Step 5
Slice the sun-dried tomatoes into strips.
Step 6
For the dressing, blend olive oil, garlic, oil from the tomatoes (30 grams), lemon juice, 1 sun-dried tomato, salt, and pepper in a blender.
Step 7
Combine everything in a salad bowl and sprinkle with walnuts.
