Description

Sea buckthorn and honey often go hand in hand, and here their bright flavor is enhanced by tea tannins. The black tea in this composition is hardly noticeable, but the character of the drink becomes bolder.

Ingredients

  • Sea Buckthorn 5 oz
  • Date honey 2 tablespoons
  • Black tea 2 tablespoons
  • Boiling water 20 fl oz

Step-by-Step Guide

Step 1

Sort the sea buckthorn, remove any debris, rinse in a colander, and let the water drain.

Step 2

Mash about 100 g of sea buckthorn into a puree using a potato masher or pestle. If you are using frozen berries, it's better to pour a small amount of boiling water over them to make it easier to mash the sea buckthorn. At this stage, you can also add sugar if you are not using honey.

Step 3

Place the sea buckthorn puree in a teapot, add the remaining whole berries and black tea.

Step 4

Pour boiling water over it and let it steep for about 7 minutes. Gently stir. Put 1 teaspoon of honey (you can adjust to taste) into cups. Strain the tea into the cups and stir the honey until fully dissolved.
