Savoy cabbage salad with greens and oranges
Ingredients
- Oranges 2 pieces
- Champagne Vinegar 3 tablespoons
- Olive Oil 2 tablespoons
- Parsley 0 oz
- White Cabbage 1 head
- Fresh basil leaves 1 cup
- Chopped Green Onions 2 tablespoons
- Coarse Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Using a sharp knife, peel the oranges and carefully cut out the segments over a bowl. Squeeze the remaining juice into the bowl as well.
Step 2
Trim the core from the cabbage and thinly slice it to yield about 2 cups.
Step 3
In a small bowl, mix the vinegar with 2 tablespoons of orange juice. Then, slowly whisk in the olive oil.
Step 4
In a large bowl, combine the cabbage, parsley, basil, green onions, and oranges. Drizzle with the dressing, season with salt and pepper, and gently toss.
