Sandwiches with Chanterelles and Eggs

Ingredients

  • Butter 4½ tablespoons
  • Shallot 1 piece
  • Pickled Chanterelles 0 oz
  • Coarse Salt to taste
  • Ground Black Pepper to taste
  • Country Bread 2 slices
  • Fresh basil leaves to taste
  • Large eggs 4 pieces

Step-by-Step Guide

Step 1

Heat 2 tablespoons of butter in a skillet over medium heat. Add finely chopped mushrooms and shallot. Season with salt and sauté until soft and golden, about 4 minutes. Transfer to a plate.

Step 2

Toast the slices of bread in a toaster and spread with 0.5 tablespoons of butter.

Step 3

In the skillet, melt the remaining butter. Add lightly beaten eggs seasoned with salt and pepper and cook until done.

Step 4

Top the toast with eggs and then the mushrooms. Sprinkle with basil leaves and serve.
