Sandwich with Ham, Cheese, Egg, and Lemon Dressing
Ingredients
- Sugar 1 cup
- Whole egg 4 pieces
- Butter 13 tablespoons
- Citrus Zest Mix 3 pieces
- Meyer Lemon Juice 5 fl oz
- Brioche 4 pieces
- Goat cheese 0 oz
- Chicken Egg 4 pieces
- Thyme 1 sprig
- Salt to taste
- Ground Black Pepper to taste
- Black Forest Ham 16 slices
- Peanut Sprouts 5 oz
Step-by-Step Guide
Step 1
Prepare the lemon dressing. In a saucepan, mix the egg yolks and sugar. Add 12 tablespoons of butter, the zest and juice of 3 lemons, and stir until smooth. Place the saucepan over medium heat and cook until the dressing thickens slightly, about 8-10 minutes. Strain the dressing and refrigerate.
Step 2
Heat a skillet over medium heat. Cut the brioche in half, spread with butter, and toast for about 1 minute. Place the toasted brioche halves on a plate, toasted side down. Spread dressing on 4 halves of the brioche, and place goat cheese on the remaining 4 halves.
Step 3
Beat 1 egg in a bowl, pour the mixture into the skillet, sprinkle with 1/4 teaspoon of chopped thyme, and season with salt and pepper. Cook on both sides and place the resulting omelet on the brioche with cheese. Repeat with the remaining eggs. Lightly fry thin slices of ham in the skillet and place them on top of the omelet on each sandwich. Distribute the mung bean sprouts among the 4 sandwiches and cover with the brioche half spread with lemon dressing.
