Salad with Tomatoes, Melon, and Basil

Ingredients

  • Tomatoes 5 lbs
  • Coarse Salt to taste
  • Cantaloupe 1 piece
  • Marinated cherries 0 lbs
  • Fresh basil leaves ½ cup
  • Olive Oil 1 tablespoon
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

In a food processor, blend the chopped beefsteak tomatoes with 3 tablespoons of salt until pureed. Place the puree in cheesecloth and squeeze the juice into a bowl.

Step 2

Using a melon baller, scoop out many balls from the cantaloupe and transfer them to a bowl.

Step 3

Cut the remaining flesh from the cantaloupe and blend it until pureed. Squeeze out the juice and add it to the tomato juice. You should have about 4 cups of juice.

Step 4

Cut the cherry tomatoes in half and transfer them to a bowl. Add the melon balls, basil, and olive oil. Season with salt and pepper. Mix well.

Step 5

Divide the salad into bowls and pour the juice over it. Serve immediately.
