Salad with Sweet Peppers, Basil, and Mozzarella
Ingredients
- Red Sweet Pepper 2 pieces
- Tomatoes 2 pieces
- Yellow Cherry Tomatoes 5 oz
- Buffalo Mozzarella Cheese 1 piece
- Basil 1 bunch
- Extra virgin olive oil 6 tablespoons
- Freshly ground black pepper to taste
- Salt to taste
- White Wine Vinegar 2 teaspoons
Step-by-Step Guide
Step 1
Place the cherry tomatoes in a deep baking dish, drizzle with 2 tablespoons of olive oil, season with salt and pepper, and put in a preheated oven (150°C) for 15 minutes.
Step 2
Grill the peppers in a grill pan, place them in a plastic bag for 10 minutes, then peel off the skin and seeds, and chop coarsely.
Step 3
Cut the large tomatoes into wedges and remove the core with seeds.
Step 4
Slice the mozzarella into rounds.
Step 5
Prepare the dressing: combine 4 tablespoons of olive oil with the wine vinegar, salt, and pepper, add a handful of basil leaves, and mix everything together.
Step 6
Arrange the peppers, tomatoes, mozzarella, and cherry tomatoes on a plate, drizzle with the dressing, and sprinkle with coarsely chopped basil.
