Ingredients
- Chicken Egg 2 pieces
- Bacon 4 slices
- Fresh Mushrooms 5 oz
- Spanish onions 10 oz
- Red Wine Vinegar 3 tablespoons
- Sugar 1 teaspoon
- Garlic 1 clove
- Dijon Mustard 1 teaspoon
- Salt to taste
- Ground Black Pepper to taste
- Fresh basil leaves 5 oz
- Blue Cheese 0 oz
Step-by-Step Guide
Step 1
Boil the eggs hard. Drain and place under cold water. Peel and slice into rounds.
Step 2
Meanwhile, in a well-heated skillet, fry the thinly sliced bacon until golden brown. Transfer to a plate, reserving 2 tablespoons of fat.
Step 3
In the remaining fat, sauté the sliced onion until caramelized. Transfer to a plate.
Step 4
In the same skillet, sauté the thinly sliced mushrooms until soft and starting to caramelize. Transfer to a plate.
Step 5
Pour the vinegar into the skillet and let it reduce slightly. Then add the reserved 2 tablespoons of fat, sugar, and mustard. Season with salt and pepper, and remove from heat.
Step 6
Arrange the spinach on plates, top with mushrooms, onions, bacon, and eggs. Drizzle with the dressing and sprinkle with crumbled cheese.
