Ingredients
- Scallops 8 pieces
- Mixed salad greens 5 oz
- Parmesan Cheese 0 oz
- Celery salt 6 stalks
- Stale Bread 0 oz
- Sun-Dried Tomatoes 5 oz
- Marinated mini artichokes 12 pieces
- Olive Oil 5 fl oz
- Dijon Mustard 2 teaspoons
- Parsley 6 stalks
- Black Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Prepare the batter for the scallops. Blend the Parmesan, celery, parsley, and bread into fine crumbs in a blender.
Step 2
Cut the scallops in half, coat them in the batter, and grill for 7 minutes.
Step 3
Whisk together the olive oil and mustard and dress the mixed salad greens.
Step 4
Plate the mixed salad greens in a neat mound. Cut the artichokes in half and place 3 halves per serving, along with 4 sun-dried tomatoes and 4 pieces of scallop. Garnish the salad with black salt and freshly ground pepper.
