- Thyme 4 sprigs
- Olive Oil 2 tablespoons
- Green Beans 5 oz
- Canned White Beans 15 oz
- Red Onion 1 head
- Feta cheese 5 oz
- Mint Leaves 1 bunch
Step-by-Step Guide
Step 1
Preheat the oven to 220°C. Place the carrots on a large baking sheet, toss with thyme and half of the oil, then season well. Roast for about 30 minutes until golden, turning once after 15 minutes.
Step 2
Meanwhile, cook the green beans in boiling water for 2 minutes. Drain, cool under cold running water, then drain again. Combine the green beans, white beans, remaining oil, onion, and feta cheese, then season to taste. Toss with the hot carrots. Before serving, sprinkle with mint.
