- Yellow Beets 2 pieces
- Blue Cheese 0 oz
- Mixed salad greens to taste
- Roasted Peanuts ½ cup
- Olive Oil 1 tablespoon
- Honey 1 teaspoon
- Salt to taste
- Balsamic Vinegar 1 tablespoon
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Preheat the oven to 375°F.
Step 2
Wrap each beet in foil, place on a baking sheet, and bake in the oven for 1 to 1.5 hours until tender. Let cool, peel, and cut into medium pieces.
Step 3
On plates, arrange the salad greens, top with beets, and sprinkle with crumbled cheese and cashews.
Step 4
In a small bowl, mix together the olive oil, vinegar, and honey. Season with salt and pepper and drizzle over the salad.
