Salad with prosciutto, figs, and pistachios
Ingredients
- Green Figs 4 pieces
- Prosciutto 5 oz
- Arugula 0 oz
- Spinach 0 oz
- Blue Cheese 0 oz
- Unsalted peanuts, shelled to taste
- Oranges 1 piece
- Balsamic Vinegar 5 fl oz
- Vegetable Oil 1 tablespoon
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Preheat the oven to 355°F. Make a cut in each fig with a sharp knife, opening it like a flower. Place it in the oven along with the prosciutto for 3–4 minutes or until the figs are warm and the prosciutto is slightly crispy. Let cool.
Step 2
Mix the spinach leaves with the arugula. Cut 2 figs into segments, leaving 2 in flower shape. Cut the blue cheese into small cubes and halve each strip of prosciutto.
Step 3
Prepare the dressing: in a small saucepan, reduce the mixture of orange juice and vinegar by about half. Remove from heat, mix with nut oil, salt, and pepper. Whisk lightly until smooth.
Step 4
On a plate, place the spinach and arugula mixture, topped with sliced figs, prosciutto, and cheese. In the center of the plate, place the whole fig. Sprinkle with pistachios and drizzle with dressing. Serve the salad slightly warm or cold.
