Salad with Olives and Cheese
Ingredients
- Mixed salad greens 5 oz
- Pitted olives 5 oz
- Feta cheese 5 oz
- Marinated cherries 5 oz
- Olive Oil 0 fl oz
- Ground Black Pepper to taste
- Champagne Vinegar 3 tablespoons
- Garlic 2 cloves
- Mild Chili Spice ½ piece
- Italian chopped parsley to taste
- Salt to taste
Step-by-Step Guide
Step 1
Chop the garlic and chili. In a small saucepan, combine the vinegar and 2 tablespoons of water, add sugar, dried herbs, garlic, and chili. Bring to a boil, remove from heat, and let cool.
Step 2
Cut the cheese into 2 cm cubes. Mix the vinegar mixture with the oil and pour over the cheese. Marinate for 2 hours. The cheese can be marinated in the refrigerator for up to 48 hours – it will only get tastier.
Step 3
Crush the olives so they crack. Cut the cherry tomatoes in half. Arrange the salad greens and cherry tomatoes on plates, drizzling with the marinade from the cheese.
Step 4
Top the greens with olives and cheese, season with pepper, drizzle with oil, and serve.
