Salad with nectarine and cheese
Ingredients
- Plums 2 pieces
- Mixed salad greens 10 oz
- Nectarines 4 pieces
- Blue Cheese 30 oz
- Chopped almonds 5 oz
- Olive Oil 5 tablespoons
- Salt to taste
- Balsamic Vinegar 0 fl oz
Step-by-Step Guide
Step 1
Pour water into a saucepan. Cut the plums in half and remove the pit. Place the plums in the water and let them cook until they become soft, then reduce the heat and start mashing the plums. Strain the mixture through a sieve and mash the pulp. You should have plum puree. Discard the tough skin. Transfer to a bowl and refrigerate.
Step 2
When the puree has cooled, add the oil, vinegar, and 1 tablespoon of water. Whisk together. Add salt to taste. Place the mixture in the refrigerator for about 10 minutes.
Step 3
Slice the nectarines into wedges and remove the pit. Cut the cheese and almonds. Toss the salad greens, add the cheese, nectarines, and almonds, and drizzle with the dressing on top.
